February is flying by which means spring is just around the corner🙌🏼 So if you’re having a case of the winter blues, I hope this salad brings you a little joy and reminds you of warmer days.
What inspired this recipe - I’m a big fan of summer rolls and during spring/summer I make them a couple times a week at least. I’ve also been seeing people make crispy rice salads where they roast cooked rice in the oven until it’s crispy then add it to salad?? As soon as I saw that, I immediately knew I had to make my own version. So I created my version of a chicken crispy rice salad with asian peanut sauce. This salad has a few different components and when combined all together, they balance each other out perfectly.
First we have the crispy rice which provides a spicy flavorful crunch. It’s so addictive and has the best texture. Said crispy rice once it’s done cooking ⬇️
Then there’s my asian peanut sauce that is sweet, savory and rich. I’m addicted to this sauce. It goes with anything asian inspired and I literally lick the jar when I’m finished. Then there’s the chicken which is sauteed in a savory asian-y sauce.
And last but not least we have all the finishing accoutrements that make up the fresh and vibrant part of this dish. You can use whatever produce and fresh herbs you like, but I love doing carrots, cucumber, avocado, edamame, scallions, cilantro, mint and crushed peanuts.
